Ingredients

  1. 1 cupFlour
  2. 1 cupCornmeal
  3. 1/2 cupSugar
  4. 1/2 teaspoonSalt
  5. 2 teaspoonsBaking Powder
  6. 2medium Eggs
  7. 1/2 cupMelted Butter
  8. 1 cupMilk

Cooking Instructions

45 to 50 mins

    In a sizeable bowl, mix the dry ingredients (flour, cornmeal, sugar, salt, baking powder)

    In another bowl, mix the wet ingredients (eggs, butter, milk)

  3. 3

    Make a well in the center, add the eggs, melted butter and milk

  4. 4

    Make a well in the center of the flour mixture, pour in the wet ingredients and mix till well combined

  5. 5

    Grease a baking pan (round or square) with butter and coat with flour

  6. 6

    Pour in the batter and tap to remove airbubbles

  7. 7

    Bake in a preheated oven or pot for 25 to 35 minutes till a toothpick inserted comes out clean

  8. 8

    Serve with tea/beverages for breakfast, as a snack, with frosting or ice-cream as dessert.

    Make sure to finish it the next day or you store in the refrigerator. But I bet you and your family with will devour all that day, it is that good 😋.

My mum used to make this for us when we were children. I think she learnt how to make it from her Yugoslav boss's wife. Making cornbread was something we all looked forward to as we all loved it. I remember she used to use soda water instead of baking soda. I make it too from time to time and intend to make one today or tomorrow. It's unfortunate that it hasn't quite gotten the popularity it deserves in Nigeria.
