Rice flour and oat bran soak up the extra moisture in this flavor packed dessert bread.

To make sure the bananas are smooth and not lumpy, mash first. Then add to mixing bowl and whisk at low speed for 60 seconds.

To make your own buttermilk, add 1 tbsp lemon juice to 1 cup milk, set for 5 minutes.

Ingredients

  1. 2 cupsgluten-free flour
  2. 1 cuprice flour
  3. 1/4 cupoat bran
  4. 4 tspbaking powder
  5. 2 tspbaking soda
  6. 1/2 tspkosher salt
  7. 2 tspcinnamon
  8. 2 tspSix Splice Blend https://cookpad.wasmer.app/us/recipes/5168118-six-spice-blend-fusf
  9. 2 cupsmashed bananas
  10. 1 1/2 cupscane sugar
  11. 1 cupbuttermilk
  12. 3/4 cupmelted butter
  13. 3eggs
  14. 1 1/2 tspvanilla extract

Cooking Instructions

    Preheat oven to 350°. Grease (2) 8x4" loaf pans, adding parchment to the bottom of the pans, grease.

    In a medium bowl, mash 3-4 bananas, enough for 2 cups. Add to mixing bowl. Whisk for 30 seconds to 1 minute on low speed. Swap in paddle attachment.

    Add sugar, milk, butter, eggs and vanilla. Mix on low speed for 30 seconds.

    Add in dry ingredients, mix for 2 minutes on low speed, or until smooth.

    Pour batter into pans, cook for 40-45 minutes or until toothpick comes out clean.

    Place on cooling rack for 5 minutes. Then remove from pans, let cool for 1 hour before serving.
