Split pea soup always reminds me of my mom's cooking. I wish I could make it as good as she can but this is my spin on her soup. Very thick soup.

Ingredients

4 hours
8-10 servings
  1. 2 lb.dried split peas
  2. 12 cupswater*
  3. 4chicken bouillon*
  4. Substitute bone in chicken broth of equal quantity
  5. 2 lb.ham on bone
  6. 4-5 clovegarlic minced or pressed
  7. 2carrots sliced or ½ cup shredded
  8. 2celery stalks leave and all medium chopped
  9. 1onion minced
  10. 2Bay leaves
  11. 1/2 tspblack pepper
  12. 1/2 tsporegano
  13. 1/2 tspmace
  14. 1/4cayenne pepper
  15. 1/8Kosher salt
  16. Fresh black pepper; at before serving
  17. Chopped cooked bacon; if there isn’t any ham or additional needed

Cooking Instructions

    Add the water bouillon cubes, seasonings (oregano, bayleef, black pepper, cayenne pepper) and hambone together. Bring to a boil and then reduce to a simmer for the next at least hour with ham bone.

    Carefully remove ham and remove any additional meat from the bone. If you have additional Ham on the side feel free to chop it small and put it into the mixture. If you can find the bay leaves remove the too.

    Start chopping onions celery garlic and carrots. Add in the peas and stir frequently. Then adding the chopped vegetables. Continue to start frequently. To prevent from sticking to the bottom of the pot.

    Reduced to a low simmer for the first hour stir frequently with the lid on and then the last hour remove lid peas should start thickening the soup and continue to stole frequently until the proper consistency you like and peas are tender.

    Additional seasoning taste and serve.
