Ingredients

1hr+
  1. 2 Tbsolive oil
  2. 1medium onion, chopped
  3. 3medium carrots, peeled & chopped
  4. 1 lbdry split peas
  5. 1meaty ham bone
  6. 4 cupslow sodium chicken or veggie broth
  7. 2-3 cupswater
  8. 2 tspdry thyme
  9. 1 tsppepper
  10. 1-2bay leaf

Cooking Instructions

    In soup pot or large sauce pan heat oil on medium heat

  2. 2

    Add onions and carrots, sauté until onions are translucent

  3. 3

    Add peas, bone, broth, 2 cups of water (reserve 1 cup for thinning the soup later if needed), seasonings

  4. 4

    Bring to boil then reduce heat to low

  5. 5

    Simmer at least one hour, check veggies for tenderness. Add more time if needed

  6. 6

    Remove ham bone from soup and take meat off the bone. Discard bone

  7. 7

    For a chunky soup, using an immersion blender Purée the soup then add the cooked ham (1/2-1 cup of meat)

  8. 8

    For smooth soup, add ham and then purée

  9. 9

    Test for seasoning. Serve with fresh sprigs of parsley for garnish and a side of hot homemade biscuits (see my biscuit recipe)

Started cooking/baking with Gram just as soon as I was old enough to stand in a chair, with her apron tied around my chest. Made my first solo Thanksgiving meal at age 8. Putting a new flair on classic nothern New England style cooking.
