Ingredients

  1. Soup mix
  2. 16 ozDried green split peas.
  3. 2Ham hocks, or 2 cups diced ham
  4. 3Carrots, peeled and sliced.
  5. 1/2 cupOnion. Chopped
  6. 2Ribs of celery plus leaves. Chopped.
  7. 2 cloveGarlic. Minced.
  8. 1Bay leaf
  9. 1/4 cupFresh parsley, chopped, or 2 tsp dried parsley flakes
  10. 1 tbspSeasoned salt
  11. 1/2 tspBlack pepper
  12. 6 cupHot water
  13. Optional but delicious
  14. 1 cupAndouille Sausage cut into 1/4" rounds

Cooking Instructions

    Layer ingredients in slow cooker in the order given; pour in water. Do not stir ingredients.

    Cover and cook on HIGH for 4-5 hours or on low for 8-10 hours until peas are very soft and ham falls off the bone.

    Remove bones and bay leaf. Chop meat into bite sized pieces.

  4. 4

    Mash peas to thicken more, if desired.

  5. 5

    About an hour before you are ready to serve brown sausage and add to soup. if you are going to add this option.

    Serve garnished with croutons. Freezes well.

Super easy & tasty! Ran out of parsley so used thyme. Will make again.
