Okra and Tofu Hamburgers with Miso Sauce

I didn't have any meat, so I tried making burgers with tofu.

If you drain off too much water from the tofu, the burgers won't be soft and fluffy. If the burger mixture is too soft, adjust with katakuriko potato starch flour. These are delicious with teriyaki sauce or ponzu sauce too. Also good with onion and shiso leaves instead of okra! Recipe by Katsurachan

  15. 1 tbspMirin
  16. 1 tbspMentsuyu (optional)
  17. 1to thin to the consistency and taste you want Water

Cooking Instructions

  1. 1

Put the tofu on a sieve, place a weight on top and leave to drain for about 20 minutes. Or use whatever tofu draining method you prefer.

  2. 2

Put the tofu, chopped up okra and drained tuna into a bowl and mash into a paste.

  3. 3

Divide into portions and form into round patties, and pan fry on both sides over medium heat. They are very soft and fall apart easily, so be careful when you're flipping them over!!

  4. 4

Combine the ◎ miso sauce ingredients. Add to the pan and coat the burgers with the sauce and it's done. Please adjust the sauce to your taste.

  5. 5

(Edit) As long as the tofu mixture is firm enough that it doesn't slide off your hand when you're trying to form it, 2 tablespoons of katakuriko is enough. The mixture is quite soft.

  6. 6

This is with the miso sauce!
