Tiramisu-style Strawberry Mousse

I thought that cream cheese with the tartness of strawberries might be too rich. Adding mascarpone cheese made this recipe more delicious.

Use small strawberries. If you have it on hand, adding strawberry liqueur will make this even more delicious.
If you like a richer taste, you can use all cream cheese instead of mascarpone cheese.
I don't add lemon juice because it makes the flavor too sour.
You can adjust the amount of granulated sugar to your liking. Recipe by ko-ko

Ingredients

  1. 1 packagesStrawberries
  2. 100 gramsCream cheese
  3. 100 gramsMascarpone cheese
  4. 70 gramsGranulated sugar
  5. 100 gramsHeavy cream
  6. 5 gramsGelatin
  7. 30 mlWater

Cooking Instructions

  1. 1

Dissolve the gelatin in water and put over a hot water bath.

  2. 2

Add hulled strawberries and 20 g of granulated sugar to a bowl and mash the berries. If want to add lemon juice, add 1 - 2 teaspoons.

  3. 3

Add cream cheese, mascarpone cheese, and 50 g of granulated sugar to a bowl and mix over a hot water bath until smooth.

  4. 4

Add gelatin from Step 1 and the strawberries from Step 2 to the mixture from Step 3 and mix together.

  5. 5

Put heavy cream into a bowl and whip until soft peaks form.

  6. 6

To the mixture from Step 4, add the whipped heavy cream from Step 5 and mix.

  7. 7

Pour into a mold and chill.

  8. 8

Here it is after it set... fluffy and jiggly.

  9. 9

Here I made these in heart-shaped molds with a bottom layer of sponge cake.

  10. 10

I made the top layer of gelatin with mashed and strained strawberries and raspberries, added sugar, water, and gelatin and heated the mixture. After letting it cool, I poured it on top of the mousse.

  11. 11

You can make this as a whole cake, too.

  12. 12

This is also delicious if you add layers of sponge cake. You can adjust the amount of mousse and thickness of the layers.
