Aloo Tomato sabzi

The simple recipe is made with potato , tomato and minimal spices. The colour comes from deghi mirch powder and flavour from ghee and kasoori methi. This curry goes well with Roti , Paratha, Poori.

The simple recipe is made with potato , tomato and minimal spices. The colour comes from deghi mirch powder and flavour from ghee and kasoori methi. This curry goes well with Roti , Paratha, Poori.
Cooking Instructions

Wash,peel and chop potatoes into chunks. Boil in water with salt and turmeric powder.

Heat ghee in a kadhai. Add cumin seeds and allow to splutter.

Add green chili and ginger. Saute some second. Add red chili powder and saute.

Mix tomatoes and coriander powder and cook till oil separate.

Add the boiled potato chunks, saute. Add kasoori methi. Mix well.
Adjust water and bring to boil on medium flame for 8-10 minutes, covered.

Garnish with green coriander and serve with Roti and pickle.
