In dhabas, dishes like dal, aloo gobhi sabzi, or mixed vegetables are commonly made. Today, I have prepared dhaba-style aloo gobhi sabzi without garlic and onions!
Cooking Instructions

Peel and chop the potatoes and cut the cauliflower. Make a paste of tomatoes, ginger, and green chilies.

Heat oil in a pan, fry the chopped potatoes, and set aside. Fry the cauliflower and set aside.

Then add 2 tablespoons of oil to the pan.

Add asafoetida, cumin seeds, and bay leaf, then mix in the tomato paste, salt to taste, red chili powder, turmeric powder, dried fenugreek leaves, fried potatoes, cauliflower, fresh peas, and vegetable masala powder.

Transfer the prepared sabzi to a serving bowl and serve.
