Tender Stewed Pork Belly Chunks

Once, while stopping by a local ramen shop, I was eating really delicious stewed pork chunks, and asked the store owner how to make them; they said that they boil it for hours to make the stewed pork chunks. I was wondering if I could make that restaurant's delicious stewed meat chunks in a short amount of time during the middle of my busy day, and came up with this.
It is important to wipe the pressure cooker clean in Step 4. This is done in order to get rid of the scum that surfaced from boiling the meat, and to make the final result look and taste good. Recipe by XLR250R.

Cooking Instructions
- 1
Place the leeks and pork belly meat block into a pressure cooker, add enough water to submerge the pork, and cook over a strong heat until the pressure cooker knob spins around.
- 2
Once the pressure cooker knob has started to move around, reduce to low heat. Cook for 20 minutes, turn off the heat, and steam-cook for 10 minutes with the lid on.
- 3
Open the knob and release the pressure, take out the pork, and throw out the water and leeks. Wash the pork clean in 105-120°F/40-50°C warm water.
- 4
After washing the pork clean in warm water, cut into 6 pieces, and wipe the inside of the pressure cooker clean.
- 5
Place the cut pork back into the pressure cooker, and add boiled eggs, thinly sliced ginger, soy sauce, sake, mirin, sugar, and water. Cook over strong heat.
- 6
Reduce to a low heat once the knob starts to move around, stew for 15 minutes, turn off the heat, and steam-cook for an additional 15 minutes.
- 7
Arrange on plates, and this unique stewed pork chunk dish is finished! It is tender and juicy! You can cut it with chopsticks!

Pressure cookers are heavy seem difficult to use, but I wanted to make tender, sauce-rich pork belly cubes, so I tried making them in my rice cooker. You can set the timer so that they're ready at dinner time, so it's easy! But you do have to warm up precooked rice in the microwave to eat with the pork. The meat will shrink quite a bit while cooking. To prevent the meat from falling apart and to minimize shrinkage, brown the surface of the pork belly block first before cutting it into cubes.I cut the block into 8 pieces in the photos, but 6 pieces may be better. This is really tender! Foolproof too! I love stewed pork belly, and this is a recipe I came up with over 10 years.Letting it sit for a long time after turning off the heat will allow the flavors to soak in, so I make this the night before, preparing it after I rinse the rice for dinner. Parboil the pork in water with about 3 tablespoons of rice if you do not have rice rinsing water. Recipe by nao2008 cookpad.japan -
Pork Belly Simmered in Ketchup Pork Belly Simmered in Ketchup
I often buy a block of pork belly, so I wanted to cook it in a different way from the usual simmered pork belly (buta no kakuni).By letting the pork cool down completely after it's cooked, the flavors penetrate well and it becomes more tasty. If you can't spare the time to let it cool, put the cooking sauce into a small pan and reduce it over high heat and pour it over the pork when you serve.
