In a bowl put in your oil, eggs, vanilla and sugar. Mix

In a separate bowl, sieve your flour and baking powder, you can add preservatives if you wish. Add the dry ingredients into the wet ingredients bit by bit until properly combined

Add the grated carrots. You can still use half a cup or more than a cup. Mix until properly combined

Pour your mixture into a baking pan, ensure you grease with butter and dust with flour. I baked for an hour on a medium heat using an oven attached to a gas

After removing the cake from the oven, allow it to cool by covering it with nylon or towel. You can eat your cake without a topping or you can quickly make chocolate ganache or butter icing to decorate your cake.....you can see my carrot cake all covered with chocolate ganache...am a chocolate lover
