Moist and Chewy Rice Cooker Tofu Cake

I created this recipe because I wanted to eat a oil free and healthy cake with the ingredients I had at home.
Adding a little more vanilla extract than usual gives this cake a nice fragrance.

Cooking Instructions

Mix all the ingredients with a hand mixer. If you don't have one, you can mix with a whisk.

Use a quick cook function and bake the mixture twice. The cake becomes fluffy using a hand mixer as the photo. I only used flour in the main picture. I served with homemade yuzu tea.

This is a matcha flavored version. It has a nice matcha color and fragrance. I added 1.5 teaspoons of matcha.

The stickiness of the natto counteracts the dryness of the okara, and the distinctive odors of the rice brain and natto cancel each other out for a very good result. I've made the ingredient amounts easy to remember, and used the sauce that comes with the natto to to eliminate waste.Adjust the cooking time depending on your rice cooker. When you are cooking the cake, it will smell like natto. (Some people may not like that, so just in case.)
