Drain off the liquid, coat the chicken, and deep fry in 170°C oil.
- 3
Mix the yogurt sauce ingredients.
- 4
Serve the fried chicken and pour the sauce on the top.

If you're strapped for time, use store-bought fried chicken and pour the sauce over it.
- 6
If you prefer a thick crispy coating, then add more katakuriko (the same amount as the flour).

Fried Chicken Sweet N' Sour Sauce with Tartar Fried Chicken Sweet N' Sour Sauce with Tartar
I made it with slightly spicy sweet n' sour sauce. In Miyagi prefecture, they dredge the meat in katakuriko dipped in egg. The fluffy inside will surprise you.A hint is to prepare the chicken meat and to season it well... When frying, make sure to add enough oil so that it comes up to half of the height of the chicken I personally like tartar sauce, but eat with whatever sauce you prefer. For reference, the tartar sauce is made by combining 1 boiled egg, minced onion, minced cucumber, 2-3 tablespoons mayonnaise, 4 tablespoons lemon juice, and salt, and pepper, and a pinch of parsley. Fried Chicken with Lemon Sauce Fried Chicken with Lemon Sauce
I fry the chicken thigh after cutting it in half, but I feel like it's easier to cut it into bite-sized pieces first and then fry them. That way, the pieces will turn out crispier, will be well flavored, and won't need to be cut afterwards. Do this however you like! The fried chicken fromwas really good, so I tried it with lemon sauce this time. Having learned the method of coating the chicken with egg after dusting with katakuriko, I've made my fried chicken this way many times. The tartness differs significantly between rice vinegar and lemon. It also differs between lemons in the summer and winter, so be sure to taste. I think tastes better if it's rather sweet.I made the sauce strong in flavor with, but the sauce this time is rather light and refreshing, so it's better to season your chicken well. For 2 servings. This is a secret recipe of mine that has no oil, eggs, or cheese yet is creamy and tastes sweet and garlicky. This may seem like a lot, but we make 1 liter of this batch. Try it over warmed vegetable salads, steamed dishes, toss with pasta, add to shabu-shabu sesame sauce, use as a dipping sauce for fried foods or chicken karaage, spread on toast, or use this instead instead of mayonnaise in potato salads. Yogurt Brined Fried Chicken (& General Fried Chicken How-To) Yogurt Brined Fried Chicken (& General Fried Chicken How-To)
The enzymes and mild acid in yogurt help the seasoning to penetrate the meat while keeping it moist and tender. Similar to using buttermilk, but less liquid involved, so less wasted seasoning. (Plus it's handier for people like me who always have yogurt on hand but not always buttermilk.)I've provided fairly detailed step by step instructions for first timers, so bear with me if you're a seasoned pro. First timers, these instructions look long and complicated, but they just look that way because I've included tips and techniques you should know about deep frying and not because it's all that hard to do.More of my fried chicken tips at the end of this post:http://chezshinae.blogspot.com/2014/09/yogurt-brined-fried-chicken-general.html x
