Even my daughter who doesn't eat much vegetables happily eats this up. Since it was the season for sweet new harvest onions, I used a generous quantity. It turned out rather well.

Ingredients

4 servings
  1. 1Sweet new harvest onions
  2. 2Carrot (medium size)
  3. 30 gramsButter
  4. 1 pinchSalt
  5. 200 mlWater
  6. 2Consommé bouillon cube
  7. 250 mlMilk
  8. 50 mlFresh cream

Cooking Instructions

    Cut the onions and carrots in half and slice thinly.

  2. 2

    Melt the butter in a saucepan and sauté the onions and carrots. Add a pinch of salt. Fry until the onions are translucent.

  3. 3

    Add the water and consommé bouillon cubes. When it comes to the boil, cover with a lid and simmer for 20-30 minutes.

  4. 4

    Turn off the heat, and add the milk and fresh cream.

  5. 5

    Mix in a blender or use a hand mixer until smooth. Warm it up before serving.

  6. 6

    Garnish with parsley if you like.
