I wanted to make something with just a small amount of simmering sauce. When I tried simmering the fish in a frying pan, it came out delicious.

Don't simmer the fish over high heat, but keep the it around medium when boiling for 15 minutes. Otherwise, the flesh of the fish will fall apart, so please be careful. Recipe by Rivarobauwau

Ingredients

4 servings
  1. 4filets Flounder
  2. 1Ginger
  3. 50 mlSoy sauce
  4. 120 mlSake
  5. 150 mlMirin
  6. 1 tbsp*Soft brown sugar

Cooking Instructions

  1. 1

I used righteye flounder this time but you can also use halibut, sea bream, or lefteye flounder. With this ratio of ingredients, any of these fish will taste wonderful.

  2. 2

Put the soy sauce, sake, mirin, and if you like a sweeter flavor, add the brown sugar into the frying pan.

  3. 3

When it begins to boil, place the fish and ginger in the pan and let it simmer over medium heat.

  4. 4

Place a sheet of parchment paper or aluminum foil on top as a lid and leave covered for 10-15 minutes as it simmers.

  5. 5

When some of the liquid has evaporated off, thickening the simmering sauce into a syrup-like consistency, coat it over the fish and you're done.
