Soy Sauce Flavored Beef

You can mix this into freshly cooked rice to make flavored rice. Serve in a bowl topped with finely chopped chives and an egg yolk for a pretty treat. It's even good topped over rice in a bento!! The savory simmered juices seep into the rice, making it delicious.

This is suited for thinly sliced thigh meat, or any meat that does not contain a lot of fat. I suggest using cheap thinly cut offcuts. You can also turn this into ochazuke (tea or hot water poured over rice). If you can't find peppercorns, it's fine with just the ginger. In that case, add more. Ingredients

  1. 300 gramsThinly sliced beef
  2. 40 gramsGinger (julienned)
  3. 1 tbspSoy sauce flavored peppercorns
  4. 1 1/2 tbspCane sugar or sugar
  5. 3 tbspSake
  6. 1 1/2 tbspSoy sauce
  7. 2 tbspMirin
  8. 1/2 tbspSesame oil

Cooking Instructions

    Cut the beef into bite-sized pieces. Julienne the ginger.

    Heat sesame oil in a frying pan and cook the ginger until fragrant. Add the beef. Wipe any excess oil with a paper towel.

    Add the sugar, 1 tablespoon of mirin, sake, soy sauce, and peppercorn. Cook on medium heat until the liquid evaporates.

    Once the liquid has evaporated, add the remaining mirin, raise the heat to high and stir until the meat is glistening.
