Without Butter Crispy Cookies Made with Roasted Soy Flour

I had kinako (roasted soy flour) at home, and I wanted to make my favourite crispy cookies with it. Then I arrived at this ratio of the ingredients.

Please adjust the baking time depending on the oven .
The cookies became crumbly after 15 minutes, crispy after 18 minutes, and crunchy after 20 minutes in our oven.

Ingredients

  1. 100 gramsFlour
  2. 30 gramsKinako
  3. 1/2Beaten egg
  4. A
  5. 40 gramsSugar
  6. 40 gramsOil
  7. 2 pinchSalt

Cooking Instructions

    Mix the "A" ingredients well. Add the beaten egg in, and mix some more.

    Add kinako (roasted soy flour) and flour to Step 1, and mix until the mixture becomes as shown in the picture. Then form the dough into a clump with your hands.

    Cover with plastic wrap, and shape into a roll. Let it sit in the freezer for about 15 minutes.

    Slice into 5 mm with a knife, and bake in the oven for 18 minutes at 170℃ / 340℉.

    When you're using cookie cutters, you don't need to chill the dough in the freezer.

    If you double the amount, you can use 1 egg, so it's easier. I always double the amount otherwise my family eats them up too quickly.
