I have good memories of these cookies.
If you use granulated sugar instead of sugar, you can enjoy the crunchy texture.

Cooking Instructions

These are the ingredients. I used granulated sugar this time. I doubled the recipe.

Cream the butter brought to room temperature with a whisk. If microwaving the butter, take it out of the microwave before it starts separating and melting!

Add sugar in 2 - 3 batches, and mix well until the mixture turns pale.

Add an egg yolk, and mix until well blended.

Add vanilla extract for fragrance. You can substitute with grated lemon zest.

Add sifted cake flour all at once, and fold it in with a spatula (Don't mix too much.)

Put it in a plastic bag, and let it sit in the fridge for 1 hour.

Shape into a roll. Preheat the oven to 170℃ / 340℉ and set the baking timer for 20 minutes (If you are cutting out shapes, do it here).

In the meantime, put the shaped dough into the freezer. It makes the cutting easier!

Put the cookies on a baking sheet, and pop in the oven!

The dough is yellowish-white, but when it turns golden brown, it's done. Adjust the baking time!
