Crispy Egg Cookies
I have been making these cookies for a long time. You don't need to sift the cake flour, but if you're using cocoa powder, sift them together.Cookies taste better when you rest the dough, but if you don't have time, omit the step. You can make cookies even with 1 beaten egg. Using only egg yolks makes the cookies more moist. Recipe by Shihosuke

If it's subtle, then place in the warm oven after baking for a while. Recipe by kkomugi

Very Crispy Cookies (With Just a Few Ingredients)
There were not enough eggs and almond powder when I was making tart crust at home one day, so I mixed what I could to come close. While my usual dough recipe is better for a tart, I was impressed by the crispiness when I baked this version. It's delicious as cookies. You don't have to knead. This is easy to make by just mixing.I increased the amount of butter by a little because my usual recipe includes egg.I used salted butter to increase the rich flavor of the egg.I guarantee that these cookies are crispy. If you use egg yolk mixed with a little bit of water for the glaze, your cookies will be yellow and shiny; if you use milk, they'll end up with a simple look. Recipe by Akito mama

Round and Crispy Chocolate Chip Cookies
I wanted to make an easy cookie recipe which used chocolate chips. Please refer to my tips for how to roll the dough. Crispy and Melt-in-your-mouth Almond Cookies
This cookie is good for a gift or taking to a party. I made this recipe because I bought the cookie cutter I had my eye on for while. I usually keep extra egg white in the refrigerator and make financierslater.Don't take too much time to mix and knead the dough through Steps 1-4. Mixing and kneading in a short time makes the cookie crispy and melting. I recommend to make icebox cookies from the remaining dough after cutting out with a cookie cutter, because you don't waste any dough and you will enjoy different shapes of cookies.
