Easy Chicken and Cabbage in Tomato Sauce

I wanted to come up with a dish to accompany a glass of umeshu.
When using canned whole tomatoes, crush the tomatoes first with your hands.
Adjust the cooking time to preference. If you like the cabbage wilted, cook longer.
Scatter grated cheese if you like. Recipe by yukihapi

Cooking Instructions
- 1
Cut the chicken thigh to bite sized pieces and chop the onions roughly. Tear the cabbage leaves into bite sized pieces.
- 2
Heat olive oil in a pot and add the crushed garlic. Cook over low heat.
- 3
When the ingredients from step 2 are fragrant, add the onion and sauté until wilted. Add the meat.
- 4
After the chicken browns, add the canned tomatoes. Measure one can of water using the empty tomato can and pour into the pot! Add the soup stock granules and simmer over medium heat.
- 5
Cook until the sauce in Step 4 reduces by half, and season with salt and pepper.
- 6
When the sauce has reduced, add the cabbage and cook slightly, and it's done. Enjoy the crunchy texture of the cabbage.
- 7
I tried baking the leftover meat with some cheese. Good for bentos.

Chicken and Cabbage Simmered in Tomato Sauce Chicken and Cabbage Simmered in Tomato Sauce
I had a lot of cabbage that I'd bought or gotten from people to use up so I came up with this recipe. Since then it's become a family favorite.Because you dust the chicken with flour before browning and then simmering it the umami is held inside and the meat won't fall apart. By sprinkling it with some sake for cooking, the gaminess of the chicken is gone and it becomes very tender. Adjust the amount of salt and water depending on how much cabbage you use. I use about 1/2 a tomato can of water. Recipe by Makichimu cookpad.japan -
