Udon Noodles with Grated Daikon and Beef

I get plenty of request for cold noodles in the summertime.
Meat and grated daikon are satisfying for an evening meal, so I came up with this recipe to serve them with udon noodles.

Don't overcook the beef. Once it's cooked though, turn off the heat.
Add water to mentsuyu to adjust the flavor.

Ingredients

3 servings
  1. 3servings' worth Udon noodles
  2. 200 gramsThinly sliced beef
  3. 2 tbsp◆Soy sauce
  4. 2 tbsp◆Hon-mirin
  5. 1 tbsp◆Sake
  6. 1/2 tbsp◆Sugar
  7. 50 ml◆Water
  8. 1as much (to taste) Grated daikon radish
  9. 1one serving about 100ml-120ml Mentsuyu and water

Cooking Instructions

    Dilute the mentsuyu to the strength listed for "warm broth" and chill.

    In a pot, heat the ingredients marked ◆. Add the beef and break it up with chopsticks while cooking.

    Once the beef is cooked, turn off the heat and leave as is to soak up the flavors (20-30 minutes).

    Boil the udon according to the directions on the package. Cool in cold water and drain.

    Fill the individual serving bowls with the udon, then top with the beef, grated daikon, and other toppings. Pour the chilled dipping sauce over the top and enjoy.
