Chocolate Muffins for Valentine's Day

I modified another muffin recipe of mine and added cocoa powder.
If you chill these in a refrigerator before serving, the flavour and texture will resemble chocolate cake.
You could decorate the baked product with various toppings. Adjust the baking time according to your oven and molds by keeping an eye on them while baking. Recipe by Hokkori-no

Cooking Instructions
- 1
Whisk the pancake mix, almond flour, cocoa powder, sugar, honey, egg and milk in a bowl.
- 2
Put the butter in a heatproof bowl and microwave at 600 W for about 30 seconds to melt. Combine with Step 1.
- 3
Rub the melted butter left over in your heatproof bowl from Step 2 with your hands into the cupcake tins. Scoop the mixture from Step 2 into the molds using a spoon.
- 4
As the batter will rise while baking, fill the molds to about 80% full.
- 5
I greased the silicone muffin tray with butter, but omit this step if you are using paper ones.
- 6
Hold the muffin tray with both hands and lightly tap it on the counter to get rid of air bubbles and to even the surface.
- 7
Add the toppings such as chopped chocolate, chocolate chips or sliced almonds if you prefer.
- 8
Bake in a preheated oven at 170°C for about 15 minutes while keeping an eye on them.

These muffins are made with plenty of Van Houten brand cocoa, and plenty of chocolate chips! Rich and delicious flavours spread in your mouth. The muffins are still fluffy even when cooled. Everybody loves them! The key to fluffy muffins is avoiding over mixing at Step 4!! When the batter is no longer floury, stop mixing. You can use any kinds of sugar, but cane sugar blends well with margarine and it's nutritious, so I recommend it! Recipe by Marimo1016 cookpad.japan -

Double Chocolate Muffins Double Chocolate Muffins
I wanted to eat chocolate muffins but I worried about the calorie count… So I came up with this recipe to make rich and satisfying chocolate muffins without butter.Once you add the flour and chocolate chips, fold in gently with a rubber spatula! They won't be fluffy when baked if you mix too much. When it's baked, poke the center of the muffin with a skewer, and if it comes out clean, it's done. If not, bake for longer.
