Ingredients

1 hour
4-6 servings
  1. 4-6skinless boneless breasts
  2. 12 ozcream cheese softened
  3. 1 1/2 cupsshredded cheese
  4. 4-6 stripsTHIN bacon at room temp
  5. Salt, pepper, onion and garlic powders and I use soul food seasoning

Cooking Instructions

    Preheat oven to 375. Spray a roasting pan.

    In a bowl, combine the cream cheese, the shredded cheese and the seasonings together with a hand mixer. Set aside.

    Lay your chicken breast down on board. Make a slit down the length in the center of the breast but don’t cut all the way through. From there make cuts inside the slit to make a pocket and season with salt and pepper inside and out.

    Spoon some of the cream cheese mixture inside the chicken and spread with fingers. Use it all. The chicken will pinch shut like glue. After you’ve stuffed each breast, wrap the bacon around the breast pulling and stretching the bacon to cover. Season again with all the seasonings. The Thinner the bacon the crispier the outside will be.

    Bake in oven uncovered for an hour to an hour and 30 minutes. Allow to sit a bit before serving.

I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
