Cooking Instructions

First, slice the onions and prepare a paste of ginger and garlic.

Wash the mutton and in a bowl, mix it with yogurt, ginger-garlic paste, salt, a little coriander powder, and chili powder. Add cumin powder and turmeric as well.

Place a pressure cooker on the stove. We will cook the mutton in the cooker. Add ghee, whole spices, and onions. Add bay leaf and sauté the onions until golden brown. Add salt.

Now add the marinated mutton and sauté it. Add the remaining spices (except garam masala powder) and sauté for half an hour until the water evaporates.

Stir occasionally. After half an hour, add 1/2 cup of water, close the cooker, and cook for 2 whistles. Turn off the heat and check once it cools down. Turn the heat back on, add the cashew and coconut paste, and garam masala. Cook for 2 to 3 minutes, then turn off the heat.

Serve the korma with bread or rice.

And to think of preparing a mutton curry without it, is not easily digestible. Mangsho /Mutton is a very popular sunday menu in almost all Bengali bones and is equally relished in all Bengali restaurants too. Here in this particular version of mine, I added some roasted fresh coconut and fried onion along with the usual ingredients to make the dish more rich and aromat. It is relished either with plain steamed rice, poori or chapati. There is no ham in trying it out with jeera rice, khushka, naan, tandoori roti or any Indian bread.
