Chilled Tofu with Zha Cai

Some years ago my spouse shared a description of this dish, which he had been served at a restaurant somewhere, and I tried re-creating it. It's become a family favorite ever since.

Mix up the sauce again just before pouring it over the tofu.
You can use commercial bottled Chinese dressing as the sauce instead. Recipe by Raby

Ingredients

4 servings
  1. 1 blockTofu
  2. 80 gramsSeasoned zha cai (Chinese pickle)
  3. 1/2 tspSoy sauce
  4. 1 tbspOyster sauce
  5. 1 tbspVinegar
  6. 1/2 tspSugar
  7. 1 tspSesame oil
  8. 1 tbspWhite toasted sesame seeds
  9. 1Ra-yu

Cooking Instructions

    Make the sauce: Combine the soy sauce, oyster sauce, vinegar and sugar in a heatproof container, and microwave for 30 seconds. Add the sesame oil and ra-yu and mix well.

    Chop up the zha cai roughly. Cut the tofu into quarters, top with the zha cai, and pour the sauce over. Sprinkle with some sesame seeds and serve.
