Soy Bean Hamburger Steaks

I wanted something made with soy beans that would satisfy my boyfriend!
You don't have to be exact about the seasonings. It will be all right if you can shape them easily. I like soy beans anyway and crush them very roughly. Adjust the amount of the sauce ingredients to taste. Recipe by Kimu keko
Cooking Instructions

Crush the cooked soy beans with your pestle & mortar or in a food processor.

Chop the onion and carrot finely and microwave for two minutes. Julienne the shiso leaves.

Put all the ingredients except the sauce ingredients into a bowl and mix together.

Shape the mixture into small balls and fry in a frying pan with oil until crispy and golden on both sides.

In the same frying pan stir-fry the mushroom quickly and add the dashi stock, soy sauce, sugar and mirin.

Check the taste and if it is alright, add the katakuriko dissolved in water to thicken the sauce. Sprinkle with chopped green onion and pour over the burgers.
