A Basic Cucumber Sandwich

When I was in high school, there was a bakery near the school that sold cucumber *only* sandwiches. They were cheap, so I bought them with my allowance. They were perfectly seasoned with salt, and delicious, and have remained in my memories.
I thought back to those sandwiches, used my favorite yogurt sauce, and made my own variation.

To prevent the sandwiches from becoming watery, be sure to squeeze out the salt-massaged cucumbers very well to remove excess moisture. Recipe by Maki Kaoru

Ingredients

2 servings
  1. 4 sliceSliced bread
  2. 2Cucumbers
  3. 2 tbsp※Mayonnaise
  4. 2 tbsp※Yogurt (unsweetened)
  5. 1/4 tsp※Magic Salt (seasoned salt)

Cooking Instructions

    Slice the cucumbers into about 1mm thick (you can use a vegetable slicer or mandoline). Sprinkle with 1/2 teaspoon salt (not listed in the ingredient list), mix it up with your hands, and let sit for about 5 minutes.

    Combine the ※ ingredients to make the sauce.

    When the cucumbers are ready, drain and squeeze them out tightly.

    Mix the cucumbers with the sauce.

    Spread the cucumbers on two slices of bread and top them with the remaining slices. Cut off the crusts. Cut each sandwich in half and they're ready.

    Put on a plate with some baby salad leaves and tomato (if you have them) for a nice presentation!
