My Salsa Mashed Potatoes

There might be times you'd prefer to serve plain mashed potatoes rather than this cheesy version with chunky salsa, but I seriously can't seem to think of any.

Ingredients

15 minutes
  1. 1-2 lbsgold potatoes or red potatoes
  2. 6 ozor more shredded cheese or Velveeta
  3. 1/4 cupsalsa or more to taste (Not to much or runny potatoes)
  4. Salt and pepper to taste
  5. 1/4 cupmilk
  6. 2 tbspsour cream (optional)
  7. Chives or dried cilantro for topping (optional)

Cooking Instructions

15 minutes
  1. 1

    Cook and cover potatoes in boiling water in large pot for about 15 min or until tender and drain.

    Return potatoes to pan and let them sit for 3 ninutes with the lid on. Now mash to your liking.

    Add cheese and salsa, sour cream and cook, now stir 3 to 5 min or until heated through.
    ☆->I shred my own cheese. I used Colby Jack in this recipe.
    ☆▪︎You can use Velveeta.
