Simple Cod and Manila Clams Steamed in Wine

Using lots of different acqua pazza recipes for reference, I modified them to my own style.
You don't need to add salt or pepper, as the manila clams, cod, bacon and butter are all salty. It's delicious!
Of course, if the flavour is a little bland, by all means, season it to your liking! Recipe by 07075013.

Ingredients

2 servings
  1. 2pieces Salted cod
  2. 20to 30 Manila clams (asari)
  3. 1/2Onion
  4. 3 cmBacon
  5. 5 gramsButter
  6. 50 mlWhite wine
  7. 1Parsley (Italian parsley if available)
  8. 5 grams★Butter
  9. 25 ml★Heavy cream
  10. 1if it isn't salty enough ★Salt and pepper

Cooking Instructions

    Put the clams in water to remove the salt. Finely chop the onion. Slice the bacon into thick strips.

    Melt the butter in a saucepan and fry the cod skin-side down. When the colour has changed a little, add the clams, onion, bacon and white wine. Put the lid on.

    When the clams have opened up, serve the cod and clams on a dish.

    Reheat the rest of the sauce in the pan and when it comes to the boil, add the ★ butter and heavy cream. Gently shake to combine everything.

    Pour the sauce from Step 4 onto the dish from Step 3. Lastly, decorate with Italian parsley and it's done!
