Bring a large pot of water to a boil then add spaghetti and cook until al dente.

Carefully scoop out 1 cup pasta cooking water then set aside. Drain pasta then return to pot.

Meanwhile, combine peanut butter, soy sauce, sugar, ground ginger, garlic, and lemon juice in a small bowl then stir to combine - it's ok if the sauce isn't completely smooth.

Add sauce to the hot pasta, plus a few Tablespoons pasta cooking water, then stir until noodles are coated and the sauce is completely smooth

Scoop into bowls then serve with scramble eggs and toppings

Thai Spicy Peanut Sauce


Creamy peanut sauce with beef strips and cous cous
Fry thinly sliced white onion in olive oil. Add your beef strips and cook till brown on medium heat. In the meantime prepare your peanut sauce. Combine your peanut butter with water, soy sauce, vinegar, sugar, pepper. Mix with hand blender. Add chopped chives at the end. Pour half of the sauce over the beef strips. Sauce will thicken up. Then pour over your other half of the sauce and switch the stove off. Add your cashew nuts and serve with cous cous.
