Cooking Instructions

Wash and cut the vegetables

In a pot, heat oil. And then start adding your veggies, then add your seasoning, curry and some thyme.

Fry on low heat until the veggies are tender.

Note:I didn't include avocado in frying the veggies. I've slice it and set aside until serving.

Tip:To avoid watery veggies, wash your cabbage at least 2 hours before frying.

Serve with Rice and stew, Jallof Rice or any desired dish.

This is a quick stir fry recipe that makes a great lunch or lighter dinner. You could add some protein of your choice to it to make it more hearty, but I enjoy it with just the veggies. I like to use a packet of the ramen noodles (without the seasoning packet, which is what mainly makes ramen not great for you) because it's cheap and quick cooking.
