Ingredients

  1. 2medium size chicken
  2. Palm oil
  3. Veg oil
  4. 1large onion(sliced)
  5. 1/2 cupchicken stock
  6. 6scotch bonnets
  7. 4red bell peppers
  8. 2large tomatoes
  9. Garlic paste
  10. Ginger powder
  11. Black pepper powder
  12. Parsley flakes
  13. Cajun seasoning
  14. Ground Allspice
  15. Thyme and curry powder
  16. cubesSeasoning
  17. Pinchsalt

Cooking Instructions

    Wash the chicken and transfer to an empty pot. Boil it and add onion, seasoning, spices, garlic and ginger. Leave it to cook.

    Drain the chicken in a colander. Then fry it till golden brown using mix oils(palm and veg oils).

  3. 3

    Slice onion, grate scotch bonnets and red peppers, chop your tomatoes. Add little oil (the remaining oil used in frying) in a pot and fry the onion and garlic paste. Add the tomatoes and pepper mix, fry.

    Add seasoning cubes, black pepper, curry, ginger powder and pinch of salt, stir. Add 1/2 cup chicken stock, bring it to a boil and add the fried chicken, stir well.

    Cover and allow it to simmer on low heat for 2mins. Done and serve.
