Cod and Potatoes Simmered with Tomatoes

I wanted to eat cod in a western style dish and came up with this recipe. My aim was to create a main dish that could be made with ingredients I usually have on hand, so I simmered the cod with canned tomatoes. It matches perfectly with the potatoes too.

Use raw unsalted cod.
I didn't add any herbs and so on this time and kept it simple, but if you add herbs when simmering it will become even more delicious. For 2 servings. Recipe by yaburie

Ingredients

2 servings
  1. 2pieces Cod
  2. 1Potato
  3. 1/4Onion
  4. 1 cloveGarlic
  5. 1/2 canCanned tomatoes (whole cooked tomatoes)
  6. 1 tbspOlive oil
  7. 1 tbspWhite wine
  8. 1/2 tspplus a bit more Salt
  9. 1 dashPepper

Cooking Instructions

    Slice the onion thinly. Cut the potato in half, then into 5 mm thick slices and put into a bowl of water. Slice the garlic.

    Season the cod with salt and pepper, and press lightly with your hands.

    Heat up the olive oil and garlic in a frying pan. When you can smell the garlic add the onion and stir fry over medium heat.

    When the onion has wilted, add the well-drained potato slices and continue stir frying.

    When the edges of the potato have started to turn transparent, layer the pieces of cod on top. Add the canned tomatoes while crushing them with your hands.

    Add the white wine and 1/2 teaspoon of salt. Cover with a lid and simmer until the potato is tender, for about 10 minutes over low-medium heat.

    When the potatoes are tender, adjust the seasoning with salt and pepper and transfer to serving plates. Scatter with some parsley if you like.
