Simmered Potatoes with Tuna and Onions

No need for broth with the richness of tuna! I used leftover canned tuna and the sweetness of plenty of onions to simmer the potatoes. Finished with a buttery flavor.

Ingredients

Serves 2 servings
  1. 2potatoes
  2. 1onion
  3. 1/2 canor more of canned tuna
  4. 1 1/2 tablespoonssugar
  5. 1 tablespoonmirin
  6. 2 tablespoonssoy sauce
  7. 3/4 cupwater (200 ml)

Cooking Instructions

    Slice the onion. It doesn't need to be too thin. Peel the potatoes and cut each into 5-6 pieces.

    Put all the ingredients marked with an asterisk (*) in a frying pan and heat. Once the oil from the tuna is distributed, add water and seasonings, cover, and simmer over medium heat.

    When the potatoes are soft and most of the liquid has evaporated, add a small pinch of butter and salt, and shake the frying pan (or pot).

    Once the edges of the potatoes are rounded, it's done. Simmering over medium heat should make the potatoes tender just as the liquid is almost gone!

    The butter adds richness, but feel free to adjust to your liking.
