Scrambled Tofu with Lots of Vegetables

I make scrambled tofu with all kinds of seasonal vegetables.

You can use store-bought prepared 4 to 5 x concentrate mentsuyu noodle sauce instead of the All-Purpose Dashi Soy Sauce. Alternatively, you can use a mixture of 2 tablespoons of soy sauce + a pinch of dashi stock granules. For 4 servings. Recipe by FarmersK

Ingredients

4 servings
  1. 1 blockFirm tofu
  2. 50 gramsCarrot
  3. 1/2of one root Burdock root
  4. 30 gramsSnow peas or mangetout
  5. 2Chikuwa
  6. 1Egg
  7. 1 tbspSesame oil
  8. 4 tbspAll Purpose Dashi Soy Sauce

Cooking Instructions

    Wrap the tofu in kitchen paper towels or a cloth towel, weight down with a plate or something, and leave to drain off the excess water for 30 minutes. Finely julienne the vegetables and the chikuwa.

    Heat up the sesame oil in a frying pan or other type of pan, and stir fry over medium heat until the burdock root and carrots are crisp-tender - about 2 to 3 minutes.

    Add the snow peas and chikuwa, then add the tofu while crumbling it with your hands. Swoosh in the All Purpose Dashi Soy Sauce, and keep stir frying over medium heat until there is no moisture left in the pan.

    Lastly add the beaten egg and mix the whole thing together. When the egg is cooked the dish is done.
