Mapo Tofu with Onions

Before I got married I used to use a commercial mapo tofu mix, but it's surprisingly easy to make this dish from scratch!
I used onion instead of leek or green onion since I usually have onion on hand. By combining the regular miso we have in house with doubanjiang and sesame oil, it turns into an authentic Chinese! Delicious even without tianmianjiang.

You don't need to drain the water from the tofu. Just cut it up and add to the pan.
Once you've put in the tofu, coat it with the sauce by shaking the frying pan so as not to crush the tofu. If you stir fry the onion very well, it will become sweeter. For 3 servings. Recipe by moj

Ingredients

3 servings
  1. 1 block(350 grams) Firm tofu
  2. 200 gramsGround pork
  3. 1 smallOnion
  4. 2 tbspeach ★ Red miso, mirin, sake, sesame oil
  5. 1 tbspeach ★ Sugar, soy sauce
  6. 1 tspDoubanjiang
  7. 1 dash★ Grated ginger
  8. 1/2 tbsp◎ Katakuriko to thicken the sauce

Cooking Instructions

    Finely chop the onion, and stir-fry it well in a frying pan.

    Add the ground pork and stir-fry.

  3. 3

    To make the miso sauce: Dissolve the miso in mirin, then add the other ingredients marked with ★ to make the sauce.

    Add the cubed tofu and miso sauce to the frying pan and bring to a boil. Add the katakuriko dissolved in water to thicken the sauce. There's not much water in the sauce, so add a little to adjust the consistency.
