Basic Cocoa Muffins

I wanted to make something easy and convenient for times when I want a little something to eat.
I listed amounts that make it easy to use a whole egg.

Mind you don't add the egg all at once at Step 2 because it will separate from the butter.
The baking time will depend on your oven, so adjust accordingly. For 4-6 muffin cups. Recipe by jh2trz

Ingredients

4 servings
  1. 50 gramsButter
  2. 45 gramsSugar
  3. 1Egg
  4. 80 grams★Cake flour
  5. 15 grams★Cocoa (Van Houten pure cocoa)
  6. 1 tsp★Baking powder
  7. 1 tbspMilk
  8. 1Vanilla extract (optional)

Cooking Instructions

  1. 1

    Mix the room temperature butter and sugar together with a whisk. It will have a cream-like consistency.

    Add the beaten egg in three batches and mix well. Add milk. If you are adding vanilla extract, do so here.

  3. 3

    Combine and sift the ingredients marked ★. Add to the bowl from Step 2.

  4. 4

    Mix well with a rubber spatula and pour the batter into muffin cups. Smooth out the surface with a spoon.

  5. 5

    Bake for 15-20 minutes in an oven preheated to 180°C. When a skewer poked through the middle comes out clean, they're done.
