I was inspired by some delicious homemade pickles made by a farmer's wife, who served them with ochazuke.

Cooking Instructions

Chop the cucumbers into 1-cm thick rounds, then put them in a plastic bag with the salt and sugar.

Seal the opening of the bag, and shake it up! Press out the air, then massage the bag from the outside.

After 2-3 minutes, transfer them to a dish, and serve. When you have time, let them chill in the refrigerator while still inside the bag.
