It's Celebration Time as Cookpad India turns 7. Time for fun , frolic and merriment .
For me also twin Celebration Time as my husband's Birthday falls on 2 nd Dec . It is a double Celebration for me . So I am elated . I made this Date , Walnut Mocha Slice , a healthy & hearty Cake Loaf for both the occasions .
Dates are rich in anti- oxideting properties & walnuts help in the brain' s functioning . They are known as Brain Food . Almonds are good for ❤️, regulates blood sugar & blood pressure , to list a few of the benefits of these dry fruits. All in all WHOLESOMENESS in a cake .

Ingredients

45- 50 minutes
Makes 1 loaf
  1. Wet Ingredients : 👇
  2. 25-30brown dates
  3. 11/2 cupswarm milk
  4. 1/ 2 cup odourless 🛢️ oil
  5. 1 tbspcoffee mixed in 1 tbsp water
  6. Dry ingredients. : 👇
  7. 3/4 cupswheat flour
  8. 3/4 cupsquick cooking oats
  9. 1/4 cupgranulated sugar (powdered)
  10. 1 tspbaking powder
  11. 1 tspcooking soda
  12. Other Ingredients 👇
  13. 2-3 tspmilk for cake batter (optional)
  14. 1/2 cupwalnuts & almonds powder
  15. 1/ 2 cup choco chip for the cake
  16. 1/4 cup choco chip to garnish

Cooking Instructions

45- 50 minutes

    Deseed the dates & soak them in warm milk for 30 minutes. Then grind them in batches to a fine paste. Do not grind them all together or they will stick to the walls of the mixer.

    Take all the dry ingredients in a bowl.Sieve them together 2-3 times so everything is incorporated very well. Add powdered walnuts & almonds.

    Mix dates paste, oil, coffee mixture, choco chips & vanilla essence in a bowl. Mix with a whisk.

    Now take a wide bowl, add dry ingredients & mix well.

    Add the wet ingredients. Whisk but do not over beat. Mix in one direction ONLY. The batter will look thick but pourable. Add 2-3 tsp milk if the batter is very thick. Mix well.

    Pre-heat the oven at 180 c for 10 minutes. Grease a loaf tin with oil & pour the batter till 3/4 of the pan. Sprinkle ample of twin choco chips on the top of the cake. Bake for 45-50 minutes. Check if it's done or not. If not bake for another 5 minutes. Remove the loaf tin from the oven.

    Cool the cake completely in the loaf tin. Then run a knife around it & invert the tin onto a plate.Tap gently to remove the cake on the plate. The cake is very soft so be careful inverting it.

    Note. : As I have used more dates, then what the recipe calls for, taste & add sugar accordingly. The recipe takes 1/4 cup sugar, but I have used only 2 tsp. It's sweet enough for us.
    Also keep an eye on the cake after 35 minutes as baking time varies from oven to oven.
