  1. 2Green Bell Peppers
  2. 1Red Bell Pepper
  3. 5Aji Dulces (Small sweet peppers - difficult to find and can be omitted)
  4. 6-10 ClovesGarlic (minced) (amount to preference)
  5. 1 BunchCilantro (hard stems removed)
  6. 1/2 BunchCulantro (Recao) (hard stems removed - difficult to find and can be omitted)
  7. 1-2 TbspWhite Vinegar (to preference)
  8. 2 TbspOlive Oil
  9. 1 tspSalt
  10. 1 tspPepper

    Combine all but Olive Oil and Vinegar in food processor or Vitamix (or blender that you have) and pulse/blend until smooth.

    Put batch in mixing bowl and add Vinegar and Olive Oil and mix by hand. This is so that Olive Oil doesn't aerate and get whitish milky consistency.

    Keep refrigerated or freeze in batches. Old ice trays are nice and make about tablespoon serving sizes when popped out. If you freeze, just add frozen, they'll melt and do just fine.

    Get ready to love this when combined to food for a Puerto Rican flavor with additional onions and garlic if you choose.
