I adapted my recipe for 'Ginger-Infused Udon with Thick Sauce' using somen. Even one bundle of somen is quite filling.

Ingredients

Serves 1 serving
  1. 1 bundlesomen or soba noodles
  2. Grated daikon radish, to taste
  3. Chopped green onions, to taste
  4. Tempura bits, to taste
  5. 2/3 pieceginger (grated)
  6. 3 tablespoons☆noodle soup base
  7. 1 cup (250 ml)☆water
  8. 2/3 tablespoon◎potato starch
  9. 1 tablespoonplus ◎water

Cooking Instructions

    Cook the somen and drain the water.

    In a small pot, combine the ingredients marked with ☆ and bring to a boil, then add the grated ginger.

  3. 3

    Reduce to low heat, add the mixture of ◎, then stir over medium heat until it thickens. Add the somen to warm it up.

    Serve in a bowl, topped with tempura bits, green onions, and grated daikon radish. The photo also shows a bit of shichimi spice added.
