Cooking Instructions

Cut the atsuage tofu and shiitake into bite-sized pieces. Briskly rinsing the atsuage in lukewarm water removes excess oil and gives a lighter taste.

Combine mentsuyu, water, ginger, sugar, and ichimi powder in a bowl and mix evenly. There you have your sauce!

In a heated frying pan, add the ingredients from Step 1, and stir-fry until browned.

Once it has browned evenly, add the sauce from Step 2. Determine the concentration of the sauce to your liking by adjusting the simmering time.

When it reaches your taste of preference, transfer to a dish and serve. To add color, I sprinkled white sesame seeds and julienned shiso leaves‼
