This is a quick and easy hearty breakfast and can be made with a variety of ingredients. It will make 4 good sized servings. I served it with almond poppyseed bread and fruit.

Ingredients

  1. 2large russet potatoes
  2. 1small onion
  3. 8 ozkielbasa, I used turkey kielbasa
  4. 8large eggs
  5. 1/2 cupmilk
  6. 1 cupshredded cheese, I used sharp cheddar
  7. Salt & pepper
  8. 2 tablespoonsoil, I used grapeseed oil

Cooking Instructions

  1. 1

    Finely dice the potatoes and onion. Heat a large nonstick skillet over medium heat with the oil. Fry the potatoes and onions for 5-10 minutes or until softened and browned nicely. Season as desired with salt and pepper.

    Add the diced kielbasa and continue cooking a few minutes more.

    Whisk together the eggs with milk and salt & pepper. Mix in cheese. Pour eggs in pan and let set for a couple minutes before gently folding. Continue cooking and gently folding until eggs are cooked.
