Adapted from a recipe on unearthed.com I have used a leftover cooked potato in its skin. I usedd a Spanish chorizo picante, but you can virtually use any chorizo you like in this... I just have a thing for spicy breakfasts! :)

Ingredients

  1. 1/2yellow onion, chopped
  2. 1 clovegarlic, finely chopped
  3. 1 cupchopped cooked potatoes, about one small potato
  4. 1/4 cupchorizo, cubed small
  5. 1 tbspfresh rosemary, chopped
  6. 1/8 tspsmoked paprika
  7. 2eggs, whipped up lightly with a fork

Cooking Instructions

    Heat a non stick pan on a medium low heat.

    Add the chorizo, and sizzle it until the orange oils of the chorizo starts coating the pan

  3. 3

    Add the onion and cook for two minutes, then add the garlic and saute for more minutes

  4. 4

    Add the potato, rosemary and smoked paprika. Season with salt and black pepper.

  5. 5

    When everything is heated through, move everything around the edges of the pan, leaving a circle in the middle.

    Add the egg, turn up the heat a little and start moving the egg around with a wooden spoon.

  7. 7

    Don't worry if bits of the chirizo mixture get mixed in with the egg, that's fine.

    Spoon onto a plate and serve hot!
