Ingredients

Makes 10 buns, each 3.5 inches in diameter
  1. (For 5 buns)
  2. 3 1/3 cups(about 400 grams) bread flour
  3. 2 1/2 tablespoons(about 30 grams) sugar
  4. 1 teaspoon(about 6 grams) salt
  5. 3 tablespoons(about 40 grams) unsalted butter
  6. 1/3 cup(about 80 grams) milk
  7. 2/3 cup(about 160 grams) water
  8. 3 tablespoons(about 40 grams) egg
  9. 1 3/4 teaspoons(about 5.5 grams) dry yeast (used Red Star)
  10. Remaining egg + 1/2 teaspoon milk (for egg wash)
  11. To taste toasted sesame seeds (for topping)

Cooking Instructions

    Let the bread machine handle the dough preparation (1-pound loaf setting is fine). I used to make it with a 1-pound setting before upgrading.

    Take out the finished dough, punch it down to release gas. Divide into 10 equal parts, shape into balls, and place seam side down.

    Cover with a damp paper towel and plastic wrap, and let rest for 15 minutes.

    With the seam side up, gently press, reshape into balls, and place seam side down on a baking sheet lined with parchment paper, leaving space between them.

    Spray with water and let rise in a 95°F oven for 30 minutes, then preheat the oven to 410°F.

    Brush with egg wash, sprinkle with white sesame seeds, and bake in a preheated oven at 375°F for 15 minutes.

    I baked them in two layers of 5 buns each. The bottom layer was lighter in color, so I moved them to the top layer and extended the baking time by 1.5 minutes.

    2. Spread mayonnaise on the inside of both halves
    Add lettuce, hamburger patty, ketchup, cheese, and tomato.

    Use 2 2/3 cups bread flour and 2/3 cup cake flour
    Bake at 375°F for 13 minutes

    Since I baked in two layers,
    I moved only the bottom layer to the top and extended the baking time by 1.5 minutes.

    The dough made with a mix of bread and cake flour is fluffier and softer.
    If you prefer a firmer texture, use only bread flour.

    Try with lettuce, scrambled eggs, and sausages.

    100 grams whole wheat flour (from Okayama)
    80 grams cake flour
    Made 10 buns.
