Let the bread machine handle the dough preparation (1-pound loaf setting is fine). I used to make it with a 1-pound setting before upgrading.

Take out the finished dough, punch it down to release gas. Divide into 10 equal parts, shape into balls, and place seam side down.

Cover with a damp paper towel and plastic wrap, and let rest for 15 minutes.

With the seam side up, gently press, reshape into balls, and place seam side down on a baking sheet lined with parchment paper, leaving space between them.

Spray with water and let rise in a 95°F oven for 30 minutes, then preheat the oven to 410°F.

Brush with egg wash, sprinkle with white sesame seeds, and bake in a preheated oven at 375°F for 15 minutes.

I baked them in two layers of 5 buns each. The bottom layer was lighter in color, so I moved them to the top layer and extended the baking time by 1.5 minutes.
