Ingredients

Serves 2 servings
  1. 6 tablespoonsall-purpose flour
  2. 2eggs
  3. 3 tablespoonsmilk
  4. 2 tablespoonsolive oil
  5. 2 teaspoonsbaking powder
  6. 2 tablespoonssugar (such as raw or brown sugar)
  7. Pumpkin, as much as you like
  8. Spinach, as much as you like

Cooking Instructions

    Mix all the ingredients except the vegetables.

    Pour into a microwave-safe dish. I used about 1/6 cup (2 ladles). Add your favorite vegetables. Cut the pumpkin into 1 cm cubes and microwave for 3 minutes at 600W to pre-cook.

    Microwave for 1 minute and 10 seconds. In my case, since the spinach was stored in the freezer, I microwaved it for 1 and a half minutes.
