Ingredients

  1. 1/2 poundpeas (about 250 grams)
  2. 2potatoes
  3. 1/2 poundcabbage (about 250 grams)
  4. 2green chilies
  5. 1 inchginger
  6. 1/2 teaspooncumin seeds
  7. 2 pinchesasafoetida
  8. 1/2 teaspoonturmeric
  9. 1/4 teaspoonred chili powder
  10. 1 teaspooncoriander powder
  11. 1/2 teaspoondried mango powder
  12. 1/4 teaspoongaram masala
  13. 1/2 teaspoon salt
  14. 1 serving spoon oil
  15. Cilantro leaves for garnish

Cooking Instructions

    To make the pea, cabbage, and potato curry, first shell the peas and wash and chop the cabbage and potatoes.

    Now, add oil to a pan. Once the oil is hot, add asafoetida, cumin seeds, ginger, and green chilies. Sauté, then add turmeric, coriander, and red chili powder. After that, add the chopped vegetables.

    Sauté the vegetables well for 2 minutes, then add salt. Cover and let it cook. After 5 minutes, stir the vegetables; they should be slightly tender.

    Next, add tomatoes, mix well, and sauté uncovered for 2 minutes. Cover again and let it cook for another 5 minutes. Then uncover and stir. The vegetables should be cooked through. Add dried mango powder, garam masala, and cilantro leaves on top. Serve with roti, paratha, puri, or dal rice.
