Lauki with Amaranth leaves

Cooking Instructions

Wash the amaranth leaves and chop fine. In a bowl add Besan, red chilli powder, turmeric powder, salt and add water to mix well. Whisk to give a shine.

Add the chopped amaranth leaves to besan mix and mix well

In a wok heat mustard oil, add 1 Tbsp of the amaranth leaves mix and on medium flame fry to make fritters, flip sides after 1 min, set aside
- 4
In the same wok add more mustard oil, add cumin seeds, bay leaf, whole red chilli and add chopped lauki or bottle gourd, add sugar and salt and cook covered until lauki is dry

In a small bowl add ginger paste and red chilli powder, fire RC powder and mix well. Add that to the lauki and mix well, add slit green chiliies, water and cover to cook

Chop the Amarnath leaves fritters and garnish on lauki. Enjoy with rice
