Ingredients

  1. 4Summer Squash, sliced
  2. 1Red Onion
  3. 1Green Pepper, chopped
  4. 1/4 cupMayonnaise
  5. 1Egg, beaten
  6. 1Sleeve Ritz Crackers
  7. 1 tbsp.Melted Butter

Cooking Instructions

    Boil squash and onion for 15 minutes, until soft.

    Drain water and mash vegetables. Put vegetables in glass baking dish.

  3. 3

    Mix mayonnaise, egg and green pepper, then mix mayonnaise mixture with vegetables in baking dish.

    Crush crackers into crumbs and mix with melted butter. Spread over top of vegetables.

    Bake at 375 for 35 minutes, until cracker topping is browned.
