Kohlrabi Apple Slaw

Try kohlrabi in place of cabbage in this slaw style salad. Adding apple gives the slaw a nice touch of sweetness, too :) I definitely recommend whole grain mustard over yellow or Dijon. Enjoy as a salad on its own or try with meats and sandwiches!

Ingredients

  1. 1medium Kohlrabi
  2. 2Carrots
  3. 1small Apple or 1/2 large
  4. Dressing
  5. 2 TbspOil olive, canola, etc
  6. 2 TbspVinegar, apple cider vinegar works well
  7. 1 TbspWhole grain mustard
  8. 1/2 tspSalt, more to taste
  9. to taste Pepper

Cooking Instructions

    In a large bowl, mix all ingredients for dressing. Set aside.

    Cut leaves off kohlrabi and peel. Peel carrots. Peel apple and remove seeds.

  3. 3

    Grate carrots, kohlrabi and apple into shreds, or cut into thin strips if you don't have a grater.

  4. 4

    Put everything into the bowl with the dressing and mix well. Adjust taste- add a touch more vinegar for more tartness, more mustard if you like, etc. Serve as a salad, alongside meats, or even on sandwiches :)
